Low-Sugar Fresh Milled Chocolate Cake
Introduction
In my kitchen, baking is an act of balance. When managing Hashimoto’s and perimenopause, the goal is to enjoy the things we love without the inflammatory "crash." By using freshly milled flour and reducing the sugar, this chocolate cake becomes more than just a treat—it’s a nutrient-dense way to honor your body’s needs. Rich, honest, and deeply satisfying, it’s proof that healing and indulgence can live on the same plate.
Low-Sugar Fresh Milled Chocolate Cake
Ingredients:
-
150g Butter (softened)
-
120g Organic Sugar (I use less than traditional recipes to keep it hormone-friendly)
-
2 Eggs
-
120g Freshly Milled Wheat Flour
-
20g Cocoa Powder
-
¼ tsp Baking Soda
-
1 tsp Baking Powder
-
1 cup Buttermilk (the acidity helps the fresh grain rise)
The Critical "Resting" Step: > Freshly milled flour contains the whole grain, including the bran and germ.
To ensure your cake is moist and has the perfect crumb, you must leave the batter to sit for 15 minutes after mixing. This allows the fresh flour to fully hydrate before it hits the heat.
Instructions:
-
Cream: Beat the softened butter and organic sugar together until light and fluffy.
-
Emulsify: Add eggs one at a time, mixing well.
-
Combine: Fold in your freshly milled flour, cocoa, baking soda, and baking powder.
-
Hydrate: Gradually add the buttermilk until smooth.
-
The 15-Minute Wait: Set the bowl aside. Now is the time to preheat your oven to 180°C. By the time the oven is hot, your batter will be perfectly rested.
-
Bake: Pour into a lined tin and bake for 30–35 minutes until a skewer comes out clean.
Icing & Serving Suggestions:
-
The Quick & Easy Option: If you're in the mood for traditional icing, combine softened butter, icing sugar, cocoa, and a dash of water. Mix until smooth and spreadable.
-
The Hormone-Friendly Option: For those of us watching our sugar spikes (especially important for thyroid stability!), try skipping the icing. Instead, serve this warm with a dollop of thick Greek yogurt or unsweetened cream. The tartness of the yogurt perfectly complements the deep chocolate flavor of the fresh grain.
